Symphony of the Senses

Master chocolatier Jane Stuart has produced a special chocolate and wine pairing for lovers and gourmands.

In this case the word special is not enough. Jane has created chocolates which she vows won’t be repeated as they are “one-off and bespoke.” This approach marks every element of the pairing. Jane took four wines from Benguela Cove Lagoon Wine Estate home to mull over at leisure. A Sauvignon Blanc 2013, a Chardonnay 2014, Matilda’s Secret 2013 and the Shiraz 2012 were put to the test. Having taking their measure she took her time creating four new chocolates.

And while some chocolatiers talk only about temperature and molecules and cocoa beans, Jane can do so but prefers to say that a successful chocolate and wine pairing is “a marriage between art and science.”
Being a romantic at heart, she has put together a chocolate and wine pairing in the grand style for February. You can sample the following:

♥  Dark chocolate with a lemon ganache filling, paired with the elegant tropical fruit flavour of the Benguela Cove Sauvignon Blanc 2013.

♥  Milk chocolate with a filling of honey and almond, paired with the complex generosity of the Benguela Cove Chardonnay 2014.

♥  Dark chocolate with a peppery ganache filling, paired with the elegant sweet fruitiness of the Benguela Cove Matilda’s Secret 2013. The white peppery notes echo the aftertaste of the Shiraz, Grenache blend and serve to accentuate its berry flavours.

♥  Dark chocolate with a very hot chilli ganache filling, paired with the beautiful rich fruit flavours of the Benguela Cove Shiraz 2012. This is the crescendo of the sensory symphony, Jane explains.

All the chocolates are handcrafted and heart-shaped. Expect heart shapes during the entire lovestruck month of February, Jane says. She has had to add small visual details to each heart to identify the different flavours.

A final word before the festivities commence. “Try the wine first. Then take a bite from the chocolate. Then taste the wine again and let the flavours mix in your mouth. An explosion of flavour awaits you ...”
